In 2019 Cristy Kisner, her husband, Sebastian, and their five daughters moved to Roswell, Georgia, from Peru. Following her dream of opening a healthy café in the United States after her husband lost his furniture company, they spent all their savings on the café. When the Covid-19 lockdown came three months later, they never closed their doors. For over a year, Cristy and Sebastian worked sixteen-hour days with barely a day off. Then, in March 2021, one of their regulars, Brandon Stanton, the creator of Humans of New York, who was living nearby during the pandemic, fell in love with the food at the café and Cristy’s incredible story and offered to write about her and sponsor a fundraiser. The post went viral and raised $1.2 million in donations for their family in just a week, allowing them to stay afloat, hire staff, serve their customers, and continue to live their American dream. The food at Cristy’s Kitchen is gluten free, dairy free, organic, and incredibly nutritious. Back in Peru, Cristy had worked for years to develop her recipes after her two of her daughters experienced a range of medical issues, from allergic rhinitis to digestive problems to an autoimmune disease. They switched to organic ingredients, removed dairy, gluten, and processed foods from their diets, and were able to get each diagnosis under control as it came. Eventually, her daughters’ special packed lunches gained the attention of the parents of her daughters’ friends, who asked how she could make such healthy food that their kids loved to eat. To share her recipes, Cristy started teaching classes at their house. Eventually she began to dream of having her own restaurant and sharing her recipes in a cookbook.
